Sugi Cookies





Actually, i intend to bake this for Aspiring Bakers #3: My Favourite CNY Cookie (Jan 2011). But was too busy to post it in my blog and now it too late. This is my another favourite cookies for new year. I always have a soft spot for buttery taste cookies and my son loves it too. All recipes will be post, when i find time to key it in. 


Ingredients:
120g ghee (QBB)
70g Icing sugar
1 egg yolk
1/4 tsp salt
1/2 tsp vanilla essence
180g plain flour
1 tsp baking powder
1 egg yolk A for glazing

Method:
  1. Cream ghee and icing sugar till combined. Add egg yolk, salt, vanilla essence and mix well.
  2. Fold in sifted flour.
  3. Form into balls, press on the top of the cookies using finger and dip a little egg yolk.
  4. Bake at 180C for 15 min or till golden brown. Remove and leave to cool before storing.
Note: I weigh each ball into 8g and if you do not like the flavour of ghee, you can substitute it with butter or lard. But
          personally, i still prefer to use ghee as the aroma is different. Ghee is made from fat of the goat's milk. You can easy
          purchase it from supermarket or baking store. Maybe next time i'll try to omit the baking powder, because causes the
          cookies to expand too much.

Feeling blue again

Lately, i have been so busy baking and doing spring cleaning that i neglect my blog. I don't even have the time to look at my dear computer. I started packing and baking on Jan, but my house was doing a make over, so i can't stop even on the eve of CNY. We decided to gave our house a new colour and some wall shelve. Every year i will help my grandma to prepare steam boat and spring cleaning, but this year i can only help to cut the food. Feeling so guilty to asked my loving sister to help me this year instead. Really very grateful that they always there for me when i needed help. If you gals happen to see my writing. I really want to thanks you all so much and i really felt so blessed to have both of you by my side. But my tiredness never ends. Eve of CNY have to help my MIL with the steam boat, new year my grandma and 2nd day prepare steamboat for sat. As my DH wanted to invite his friend over this year for a gathering. BUT.... Phew finally it over by today. I'm dead tired , just like a walking zombies. Looking fine, but brain dead, coz i promised my dear son that i'll stay with him after i finish all my chores, so i bought him to Marine Bay amusement park in the night. Sometime, i really feel like dropping dead for months and months like sleeping beauty. I do not have any social life and any time of my own. Feeling so lonely and sad, cum my bag are always so heavy why.... :<  Maybe i'm fated to work non-stop for my whole life.

Coco crunch chocolate cake

Times really flies my dear son is now 4 yrs old. He requested a Mickey Mouse cake. But recently had been busy baking CNY cookies and it really drains me out. So i can only do a simple Mickey Mouse theme for him. I spent 1 whole day making 190 Mickey and Minnie Mouse chocolate cookies as a gift for his classmate, then another half day to do the the cake and decoration. O gosh! It really very tiring. Thank goodness my Dear V sis came to my rescue again, she came on Thursday afternoon to help me look after the kids. While, i spent my time in the kitchen doing the cake. My dear boy was thrill when he saw the cake and kept telling me that he was very happy.

This time I'm really very happy with the result, the cookies turns out, just nice for my taste and the cake finally got a smooth surface. The whipping cream was also very cooperative too. I did a 3 layer chocolate cake with white chocolate chip, using coco crunch with whipping cream for the filling. All edible except for the candle lol! Actually i intend to deco the cookies too, but was plain to lazy :o

Matcha Yogurt Cake


Ingredients: (8 inch cake tin)

(A)
90g butter (room temperature)
100g icing sugar
2 eggs (beaten)
150g plain yoghurt (1 bottle)

(B)
180g self raising flour
1 tbsp matcha powder

(C)
150g ready red bean paste filling (diced small)

Method:
  1. Beat butter and sugar of (A) until smooth. Add eggs in slowly and then yoghurt, mix well.
  2. Then mix in the (B) till combined.
  3. Add in (C), mix well. Pour into a greased and lined cake tin.
  4. Bake in a preheated oven at 180C for 30-45 mins, until skewer inserted come out clean.

Chocolate Strawberry Log Cake

Please pardon me for being a mountain tortoise. I had never tried any gingerbread man cookies or any log cake cake before and this is my first attempt doing a swiss roll. I baked some gingerbread man cookies for my dear boy, but flung badly. He took a bite and rejected it. It does not taste bad, but it just too hard. Maybe i over do my dough or i change the recipes to
cold butter. This swiss roll is also a flung piece. But however, i decided to post it.










Ingredients: (Chocolate sponge)
(A)
4 Egg yolks
20g Sugar
1/2 tsp vanilla essence ( optional replace with chocolate emulco)

(B)
4 Egg Whites
1/4 tsp Cream of tartar

(C)
100g Sugar

(D)
70g Plain flour, sifted
30g Cocoa powder
1/2 tsp Baking powder

Method:
  1. Whip (A) until light and fluffly. (Pale or double in volume)
  2. Whip (B) until soft peaks form. Add (C) and continue whipping until stiff.
  3. Mix meringue with (A) until well blended.
  4. Sieve in (D) and fold until well incorporated.
  5. Pour it into a greased and lined swiss roll tins.
  6.  Bake in preheated oven at 180C for 8-10 mins till cooked and springy.
  7. Remove, turn onto a big piece of greased proof paper sprinkled with 1 tbsp castor sugar and leave to cool.
Strawberry Cream

Ingredients:
200g whipped cream
200g strawberries, chopped  and pad dry)
Chocolate spread can be added to whipped cream or melted chocolate.

Method:
  1. Spread cream on the swiss roll and sprinkle with chopped strawberries.
  2. Cover strawberries with some whipped cream.
  3. Carefull roll up the cake.
 Notes:
  • Do not attempt to put too much whipped cream or strawberries. I put 250g strawberry and i could not roll up properly.
  • Bake this in a smaller cake tin lined the parchment paper higher, if you do not have a bigger tin like me.
  • Can use cold or room temperture egg, i use slightly colder eggs.
  • Must be gently, when rolling the cake.
  • Method are all correct, but i overstuff the cake and roll it too hard causing the failure.

MERRY CHRISTMAS TO ALL MY DEAR BLOGGER!!!

Yesterday, i prepared some simple dishes and had a small celebration with my family. My younger sis and bro also came to our house. Couldn't buy any turkey at last mins, so i choose to bake ham.


Honey bake ham with honey mustard sauce,


Some baked potatoes cheeses and butter corn,



Chicken rice baked rice.

Well. That me simple life and simple meal.
