Easy Bananas Chocolate cake


Previously, i baked a banana chocolate cupcakes and gave some to my sisters. The feedback was excellent and my elder sis was craving for it. So i decided to bake some to fulfill her bananas craving (monkey loves it) Ssh! Hopefully, she was not reading this! I think it the bananas that makes this cakes so moist and yummy...

Ingredients (Makes a "9 inch square tin")
(A)
200g caster sugar
200g brown sugar
250g cake flour
70g cocoa powder
11/2 tsp baking powder
11/2 tsp baking soda
1/2 tsp salt


(B)
2 Grade A eggs (70g with shell)
3 medium bananas
90ml water
90 ml chocolate milk
60ml unsalted butter (melted)
1 tsp vanilla essence
1 tsp banana essence
80g chocolate chips


Methods
  1. Whisk Ingredients A together well.
  2. In another large bowl, whisk Ingredients B well.
  3. Add Ingredients B to Ingredients A  stir until combined.
  4. Pour into the lined and well greased tin.
  5. Bake it in a preheated oven 180C for 45 minutes.

Dulce de leche pound cake


Ingredients (Makes 2 loaf tin or 8 inch square tin)

160g unsalted butter
60g caster sugar
1/4 tsp salt
2 tsp vanilla essence
1 cup homemade dulce de leche
200g plain flour
40g corn flour
2 tsp baking powder
4 large eggs

Methods
  1. Sieve all flour twice and set aside.
  2. Grease cake tin if using and preheat oven at 170C.
  3. Cream butter and sugar till light and fluffy.
  4. Add in salt, vanilla essence and dulce de leche, whisk till incorporated.
  5. Turn to low speed slowly add in all the sifted flour and whisk till smooth and not lumpy.
  6. Add in the eggs gradually one at a time, whisk well.
  7. Pour the mixture into the prepared pan and bake at 170C for 1 hour.

Verdict of this cake
  • My DH and son like it alot, they had it for supper and breakfast. Each took two slices at ago.
  • Don't be fool by it appearance ( lousy presentation and foto taking), the pound cake itself was very moist and light..... I can't describe the feeling some furry feeling with the strong aroma of dulce de leche lingering in your mouth.
  • Will try to bake it again using the original recipes with condensed milk.
Hope it not too bad for my first attempt!

Matcha and chocolate cake

Ingredient: (makes a 9 inch square tin)
- 160g cake flour
- 1 Tbsp baking powder
- 75 ml milk (divide into two portion)
- 2 Tbsp cocoa powder
- 2 Tbsp matcha
- 200g unsalted butter (room temperature)
- 1/4 tsp salt
- 190g icing sugar
- 4 eggs
- 150g ground almonds

Methods:
  1. Preheat oven to 180C.
  2. Sift all flour together in a medium mixing bowl and set aside.
  3. Divide the milk into two portion and warm it. Add the cocoa powder in portion one and add the matcha in portion two mix well.
  4. In another large bowl beat the butter with the icing sugar until creamy.
  5. Slowly add eggs one by one and whisk till well combined.
  6. Mix in the sifted flour and ground almonds.
  7. Divide the batter into two portion. Mix portion one with the cocoa mixture and portion two with matcha mixture.
  8. Pour half portion of the chocolate batter in the well greased cake tin, cover with the matcha batter and finish with the remaining chocolate batter.
  9. Bake for 50 -60 mins or till cooked.

Notes:
  • I baked it in two oval cake tin.
  • Must line and grease the cake tin well.
  • Next time must add cream cheese frosting on the cake. It helps to enhance the taste.
  • Tips: Can add some chopped walnuts, almond flake, chocolate chip & etc.
  • I add 100g white chocolate chips to the chocolate batter.

Matcha Yogurt Cake


Ingredients: (8 inch cake tin)

(A)
90g butter (room temperature)
100g icing sugar
2 eggs (beaten)
150g plain yoghurt (1 bottle)

(B)
180g self raising flour
1 tbsp matcha powder

(C)
150g ready red bean paste filling (diced small)

Method:
  1. Beat butter and sugar of (A) until smooth. Add eggs in slowly and then yoghurt, mix well.
  2. Then mix in the (B) till combined.
  3. Add in (C), mix well. Pour into a greased and lined cake tin.
  4. Bake in a preheated oven at 180C for 30-45 mins, until skewer inserted come out clean.

Madeleines






Ingredients:
160g castor sugar
Zest of 1 lemon
3 eggs
50ml milk
170g plain  flour
30g corn flour
11/2 tsps baking powder
1 tsp vanilla essence
200g salted butter, melted


Method:
  1. Sift flour and baking powder set aside.
  2. Mix the sugar with lemon zest and set it aside for 1 hour for the smell to be infused into the sugar.
  3. Then add the eggs into the sugar mixture and beat until mixture is slightly thick and add in milk and mix well.
  4. Add in sifted flour and mix well.
  5. Add in melted butter and mix until batter is glossy. Cover with a cling wrap and refrigerate for 1 hour.
  6. Oil the madeleines moulds with butter and lightly flour it. Tap away excess flour from the moulds.
  7. Fill the moulds with batter just slightly more than ½ full.
  8. Preheat oven at 190C and bake the madeleines for 15 to 20 minutes or until brown. Unmould and leave on rack to cool. You can sift some icing sugar or snow powder on the madeleines when it has cool down completely.

Banana cake


Ingredients

180g Butter
150g sugar
2 Large eggs (beaten lightly)
250 flour
1 tsp baking powder
1/2 tsp baking soda
220g banana or up to 400g- mashed
2 tbsp evaporated milk
1/2 tsp banana essence (optional)
2 banana slice for deco on the cake

Methods

  1. Cream butter and sugar till light and creamy.

  2. Pour in eggs gradually and beat till creamy.

  3. Add in milk, mashed bananas and banana essence and mix well.

  4. Add in flour, baking powder and soda and beat for a while only.

  5. Pour into an 8 round tray and arrange sliced bananas on top.

  6. Bake at 180c for 60 mins, remove foil bake at 170c for 15 mins to brown the surface.
For those who like moist cake used 400g of bananas. It was very tasty and yummy from the feed back of my friends and relatives.  I also add in 20g of chocolate chip.
