Coco crunch chocolate cake

Times really flies my dear son is now 4 yrs old. He requested a Mickey Mouse cake. But recently had been busy baking CNY cookies and it really drains me out. So i can only do a simple Mickey Mouse theme for him. I spent 1 whole day making 190 Mickey and Minnie Mouse chocolate cookies as a gift for his classmate, then another half day to do the the cake and decoration. O gosh! It really very tiring. Thank goodness my Dear V sis came to my rescue again, she came on Thursday afternoon to help me look after the kids. While, i spent my time in the kitchen doing the cake. My dear boy was thrill when he saw the cake and kept telling me that he was very happy.

This time I'm really very happy with the result, the cookies turns out, just nice for my taste and the cake finally got a smooth surface. The whipping cream was also very cooperative too. I did a 3 layer chocolate cake with white chocolate chip, using coco crunch with whipping cream for the filling. All edible except for the candle lol! Actually i intend to deco the cookies too, but was plain to lazy :o

Matcha Yogurt Cake


Ingredients: (8 inch cake tin)

(A)
90g butter (room temperature)
100g icing sugar
2 eggs (beaten)
150g plain yoghurt (1 bottle)

(B)
180g self raising flour
1 tbsp matcha powder

(C)
150g ready red bean paste filling (diced small)

Method:
  1. Beat butter and sugar of (A) until smooth. Add eggs in slowly and then yoghurt, mix well.
  2. Then mix in the (B) till combined.
  3. Add in (C), mix well. Pour into a greased and lined cake tin.
  4. Bake in a preheated oven at 180C for 30-45 mins, until skewer inserted come out clean.
