Ice-cream cone cupcakes

An interesting ideas for cupcakes lover. If you gals have been reading my blog, you should have knew that i am still struggling to bake. Have this scary virus  revolting around my house for almost one month and my kids have already half recovered, but their poor mum caught it at last. Haa!!! Maybe it my will power to be strong for them till they are almost recover and my mentality relax and cave in to the horrible virus. These cupcakes are supposed to be so... beautiful done with a dome and some whipped cream pipe as topping to present it like a real ice-cream, but i was too tired. Even the photo was taken badly. These are chocolate and cream cheese cupcakes

(Makes 8 Ice-cream cone cupcakes)
Ingredients: 
8 pcs ice-cream cone
Cream cheese filling
- 110g cream cheese (room temperature)
- 35g caster sugar
- 1 small egg
Chocolate cupcakes
- 90g plain flour
- 60g caster sugar
- 60g brown sugar
- 20g cocoa powder
- 1/2 tsp baking powder
- 120g chocolate milk ( i used HL milk)
- 40ml melted salted butter\
- 1/2 tbsp lemon juice
- half lemon zest
- 1/2 tsp chocolate paste ( i used vanilla essence)

Method:
  • Preheat oven at 190C. Using aluminium foil cover the muffin tray and cut a cross in the hole.
  • Cream cheese filling: Beat cream cheese until smooth, add sugar and egg mix until smooth. Set aside.
  • Chocolate cupcakes: Sift together all flour and add sugar mix well. Using a bowl, mix the milk, lemon juice. lemon zest, vanilla essence and melted butter. Make a well in the dry ingredients, stir in the wet ingredient carefully and scoop into the ice-cream cone. Lastly, spoon the cream cheese mixture on it.
  • Bake in the oven for 25 mins or until skewer comes out clean.
  • Sprinkle some topping on the cupcakes or pipe some cream on top as desire.\
Notes:
store the cupcakes in an air-tight container.

Oreo cheese pops

Just a short posting... Having been feeling so sick recently, that left me with no mood to bake. Everyday wakes up telling myself. Oh! dear the deadline is reaching. In fact, i have been sourcing around the website, when i glance upon this and i felt in love with it and decided to give it a try. But i was just too sluggish. I am submitting this to: Aspiring Bakers #6: Say Cheese! (April 2011) http://needmorenoms.blogspot.com/2011/04/aspiring-bakers-6-say-cheese-april-2011.html

Ingredients:

-1 block of cream cheese (250g, room temperature)
- small packet of chocolate Oreo (i used 51/2 packet/ 16 pieces and crush finely together with the Oreo cream)
- some chocolate or candy melt
- some topping to sprinkle

Method:
  1.  Crush the whole Oreo with the cream together or pulse it finely in the blender.
  2. Add in the soften cream cheese and mix well until incorporated.
  3. Using a melon scoop/small ice-cream scoop, scoop and roll into balls place on a tray lined with baking sheet and send in the fridge to chill for 30 mins.
  4. Melt chocolate/candy melt of your choice and dip the lollipop stick into the chocolate and poke it in the Oreo cheese balls.
  5. Put all pops back into the fridge for 15 mins to firm it.
  6. Melt another candy melt until smooth and dip in the top of the Oreo cheese balls.
  7. Sprinkle some topping on top quickly.
Note:
  • Take 3 pops at a time to dip the chocolate coating, as the pops melt very fast.
  • Can used black and white chocolate or only black chocolate to do all coating.
  • I used yakult straw to replace the lollipop stick, coz i was too sick to leave the house to purchase some.
  • After coating the pops with chocolate twist and tap lightly to remove excess chocolate, but must work fast to prevent chocolate from harden.
  • I was plain to lazy to sprinkle the topping, i just dip the pops into the topping and tap lightly.

Hazelnut Mousse Cake

Another over due posting. A birthday cake for my Thai friend birthday on 08 April. Have been very busy and very exhausted recently. My daughter had a fall and was done with 13 stitches. Then 2 weeks later, she was down with a terrible cough followed by flu and now high fever. My DH also caught the virus and my son also having fever, flu and cough. Ooh! Gosh! They took turns. My son have high fever for 2 days, then my daughter have high fever for 2 days and now my son got high fever again. I was like today pack boy bag in case the need to rush for hospital, the next day unpack and then pack girl bag. I wonder when will it come to an end. Now I'm the only one with the will power and constantly telling myself that i won't fall sick dragging my legs out of the bed daily. My poor eggs too every night out of the fridge and back in the afternoon.



Actually, i plan to do some cheese pops for my son school Easter day celebration, but don't think that i have the time now. Hopefully, they recover fast and i can do some for my son classmates. My son school teacher are so warm and caring. They will really take time to communicate to us regarding my son progress and his mood swing.

A glimpse of the inner cake. Overall, I'm satisfy with the cake only for the deco. Coz my friend is a very traditional type of person, i replace the chocolate deco with peach.

A Simple dessert

A simple dessert on a lazy Sunday afternoon for my family. Using 4 bananas wrapped with crepes, cut some strawberries and arrange on the crepes. Lastly topped with some ice-cream drizzle in some Hersey chocolate syrup on the strawberries and scoop some ice-cream on top and side and sprinkle some grounded peanuts. Ta la! It time to tuck in.

Moist chocolate banana cupcake

Another chocolate banana cupcake to present, this round i finally got the taste i want. It taste like brownie very moist with a tint of banana and chocolate taste. The portion was very well combined not too strong of banana and not too strong of chocolate. All i can it absolutely yummy! It can be eaten warm and cold. A definite recipes that i will keep.



I gave 2 to my sis and the feed back was excellent. I prefer to eat it cold from fridge and top it with a scoop of vanilla ice-cream. Ooh! Gosh! It taste heavenly for a humid day.

Makes 12 pieces
Ingredients:
- 120g fine sugar
- 80g brown sugar
- 122g plain flour
- 38g cocoa powder
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 grade A egg
- 3 medium (banana mashed)
- 120ml water
- 60ml chocolate milk ( i used HL)
- 60ml melted unsalted butter
- 1 tsp vanilla extract
- 1/2 tsp banana essence (optional)
- 80g chocolate chips (optional can use chopped walnuts/any nuts of your choice/ raisin)
- some roasted walnuts for deco

Methods:
  1. Preheat oven at 180C.
  2. In a bowl, sift flour, cocoa powder, baking powder, baking soda, add salt, sugar and chocolate chip mix well.
  3. In another bowl, whisk the egg.
  4. Add mashed bananas, water, milk, vanilla extract, banana essence and melted butter.
  5. Make a well in the dry ingredients, stir in the well ingredients till combined.
  6. Scoop mixture into the muffin cup 80% full and bake for 20 mins until cooked. (Do not over bake or else cupcakes will be dry)

A Truly Surprise

 

First of all i have to thank smallsmallBaker for passing me this One Lovely Blog Award, it so sweet of her to remember my blog. This award really came as a pleasant surprise for me, as i didn't expect any award for blogging. Initatlly, i started this blog to record my passion in baking and i join Aspiring Bakers just to gain more knowledge in baking. This award really inspire me to blog more and which mean to bake more haaaaa.

 A brief intro of 7 random things about myself:
  1. I am a baking freak, i love to source for recipes every night when my kids are asleep or visit every book store to peek at their recipes.
  2. Enjoys being alone in the kitchen to play around here and there with my buddies.
  3. I felt so fulfill , when people said that my cake are nice.
  4. Loves shopping and shopping, but hates it when its the time to pay.
  5. Most of the time i only took nips of my cakes. (i don't like eating cakes, except for chocolate bakes) Strictly watching my waistline.
