Double chocolate Muffins



Makes 8 pieces.

Another easy chocolate muffins. White and black chocolate chips and melted chocolates. Using the dry ingredients and mix wet ingredients, sprinkle and sent into preheated oven at 200C for 25 minutes.

Peanut butter Frosted cupcake

This cupcake was a last minutes idea to clear the bottle of homemade peanut butter. The preparation was very fast easy. I just mix all sift flour together, add the wet ingredients, fold in the chocolate chips and 2 tbsp of peanut butter to swirl. Then i sent the mixture into a preheated oven and bake at 170 for 20 minutes. OMG! The peanut butter was heavenly and when it was done the aroma was very strong. My DH loves it very much and refuse to give any to his colleague.





Mango delight

This cake was created specially for my mum birthday on 22 march. Hopefully, she was happy that day. I did a Oreo base, mango cheese and mango mousse with mango puree topping. Yummy! The combination was not too rich and it taste like mango ice-cream. Next time will add some mango cube into the mousse and it will be even more yummy!!!

Makes a 18cm round tin

Ingredients:
Cake Base
- 113g Oreo cookies (cream remove and crushed)
- 53g unsalted butter

Mango Cheesecake
( A)
- 250g cream cheese
- 60g sugar
- 15g cornflour

B)
- 1/2 tbsp lemon juice
- 1/2 lemon zest (grated)
- 90g mango puree

(C)
- 2 small eggs

( D)
- 80g whipping cream (i used diary cream)

E)
- 1 mango (i omit)

Mango Mousse
- 300g whipping cream (whipped, remove 80g for deco)
- 180g mango puree
- gelatin 13g
- water 30ml
- some melted chocolate to deco
- 5 tbsp mango puree to deco

Method:

Cake base
  • Crushed Oreo cookies and mix with melted butter, press firmly and put into fridge for 15 mins until  firm.
Mango Cheesecake
  • Cream (A) until smooth.
  • Add (B) mix until well blended.
  • Add (C) one at a time and cream until smooth.
  • Follow by adding in the (D) and cream until well combined.
  • Pour the batter into the Oreo cookies base.
  • Steam bake at 160C for 60 mins or until firm.
  • Remove and set aside to cool.
Mango Mousse
  • Put water, gelatin, mango puree and bring to boil till gelatin dissolved. Set aside to slightly cool.
  • Whip the whipping cream and add the slightly cool mixture in. Mix until well combined.
  • Pour the mousse into the cool cheesecake and fridge for 1 hour.
  • Unmould carefully and pipe the whipped cream on the cake top as desire.
  • Add some melted chocolate deco and spoon the mango puree carefully on the middle of the cake.
  • Refrigerate the cake for at least 5 hours or over night. Serve chilled.

Maple cupcake

My J sis gave me a bottle of maple syrup and was sitting in my fridge for more than a month. I wonder how should, i do about it and saw Happy Flour using it to make cupcakes. Hence, i decide to try it too. Wow! the texture of the cake was indeed very soft and fluffy filled with the aroma of maple syrup. The combination of walnuts was excellent too. All thanks to Happy Flour for sharing this recipes.



Makes 8 pieces
Ingredients:
140g unsalted butter (room temperature)
1/4 tsp salt
140g maple syrup
11/2 tbsp caster sugar
1 large egg
110g plain flour
20g corn flour
1/4 tsp baking soda
80g walnuts (roasted and chopped)

Methods:
  1. Preheat oven at 180C.
  2. Sift flour, baking soda.
  3. Cream butter, salt and maple syrup until light and fluffy.
  4. Slowly beat in the egg.
  5. Fold in the flour until combined.
  6. Lastly add in the chopped walnuts and mix well.
  7. Fill the paper cup 80% full.
  8. Bake in a preheated oven for 25 mins.

Apple muffin with streusel topping

Having been searching the web recently for my craving. My DH bought some muffin home, after trying i felt in love with it. But can't seem to find any similar recipes. I remember the strong aroma of cinnamon streusel topping, the ingredients inside the muffin was an ??? So with no choice, i can only opt for something similar with the cinnamon topping. Then i saw this on Diana's recipes with the ingredient topping i want and immediately, i started to bake. My DH can't remember where he bought the muffin from till now. Well the topping was very delicious and it was gone the next day.



Makes 10 pieces
Ingredients:
Streusel Topping
1/4 cup plain flour
1/4 cup brown sugar
1/4 tsp ground cinnamon
28g cold butter

Muffins
1 cup + 2 tbsp plain flour
1/2 cup fine sugar
2 tsp baking powder
1/4 tsp salt
1 large egg
1/2 cup milk
71g unsalted butter (melted)
1 large apple (remove skin, encore and cut into small cube)

Methods:
  • Preheat oven at 200C.
For Topping:
  1. In a medium bowl, mix sifted flour, brown sugar and cinnamon powder.
  2. Rub in the cold butter and set aside.

For Muffins: -
  1. Sift flour, add in sugar, baking powder, salt and set aside.
  2. In another bowl beat egg, add milk and melted butter mix well.
  3. Fold in the chopped apple and fill batter 80% full in the muffin cup.
  4. Sprinkle 1 tbsp of streusel topping.
  5. Bake in a preheated oven for 20-25 mins. Leave the muffin in the tray for 5 mins and remove to cool on the wire tray.

Chocolate Oreo cupcakes

My son suffer from stomach flu virus for a week. As a mum myself , i can't help feeling so helpless. He ate nothing and refuse to drink much water. I bought his favourite doughnut, but he refuse to eat. So i thought of baking some cupcakes with his favourite Oreo biscuits crossing my fingers hoping he will be tempted to eat something. Guess! What he really did and took two at ago.







Makes 10 pieces 

Ingredients:
120g unsalted butter (room temperature)
80g sugar
1/4 tsp salt
1/2 tsp vanilla essence
2 eggs grade-B (beaten lightly)
80g plain flour
20g corn flour
1 tsp baking powder
10 pieces Chocolate Oreo biscuits (roughly crushed, with the cream on)
5 pieces Chocolate Oreo biscuits (halved)

Method:
  1. Sift all flour into a bowl and set aside.
  2. Beat butter, sugar, salt and vanilla essence till smooth and pale.
  3. Add eggs in a slow stream.
  4. Fold in crushed Chocolate Oreo biscuits.
  5. Spoon batter three-quarters full and place the half Oreo in the middle.
  6. Bake in a preheated oven at 180C for 20-25 mins.
